Kale is the great, great and greater grandfather of all our modern day cabbages. This curly loose leafed cabbage was first brought into the British Isles when the Romans invaded Britain and was the staple veg eaten by the Romans while building Hadrian’s Wall. The kale was hardy enough to withstand the winter and also highly nutritious. Kale is an excellent source of Vitamin K, vitamins A, C, E, a range of the B vitamins, minerals such as magnesium and iron plus omega3 and folate and grown locally during the autumn and winter.

Kale is rich in lutein  an anti-oxidant which helps keep the eyes healthy and contains 76mg lutein per kg, compared to broccoli which has 17mg. So don’t hold back in using this supercharged green veg. Roast it and make Kale Crisps, stir fry it, make potato cakes with it or just plain boil it, the combinations are endless as are the health benefits.

Kale is a member of the cabbage family, with dark green or red frilly leaves and distinctive cabbage-like taste it is a popular alternative to cabbage, spring greens or spinach.  Kale is served cooked and can be chopped or pureed. Kale compliments game or spicy dishes and can be steamed, stir-fried or boiled.  It is high in folate and vitamin C and a boiled 100g portion provides 24 calories, 1.1g fat, 1g carbohydrate, 2.4g protein and 2.8 g fibre.
