Ironically enough, horseradish is actually poisonous to horses! And would you believe its another member of the cabbage family with an impressive amount of vitamin C. The root, which is similar in appearance to a parsnip, has a very hot, mustardy type flavour.  With a very distinctive, pungent aroma it is great for flavour. The long root can be sold in pieces which is washed peeled and grated to use. Any not used can be frozen for another time.

Horseradish is low in fat and calories as well as containing good amounts of dietary fiber, antioxidants, vitamins and minerals. It has been found to have anti-inflammatory and diuretic effects.

A typical 100g portion contains 11.29g carbohydrates, 1.18g protein, 3.3g fibre, 0.69g fat and just 48 calories.

Description

Horseradish is a member of the Brassicaceae family which is cultivated for its thick, fleshy, white roots.  The bite and aroma of the horseradish root are almost absent until it is grated or ground.  To make the flavour a bit milder add vinegar.  Horseradish is known for being low in fat but high in flavour.
