A product sourced locally, it is also the best-known sea vegetable of the North Atlantic, its versatility and ease of use make it a popular choice for a wide variety of dishes.  It’s purple-red colour and slightly spicy taste means it can simply be washed, soaked and cut to be added to soups, salads or dry roasted and crumbled as a colourful garnish.  Dulse is very nutritious and rich in fibre, and contains high levels of protein.

Description

Dulse is a seaweed often thought of as a local seaside novelty. However It contains more vitamins, nutrients and minerals weight for weight than land plants and has high levels of Protein and Iron but perhaps it is best known for Iodine. Iodine is essential for your thyroid gland. An iodine deficiency can cause symptoms such as fatigue, high cholesterol, lethargy, depression, and swelling of the thyroid gland. Prevent this dangerous deficiency by eating the right amount of iodine rich foods each day. Easily done if you like Dulse but eat small portions over time in order to gain the health benefits.

DULSE CHEESIES

Need :

  • 125 g (4 ½ oz) plain flour
  • 200 g (7 oz) Cheddar Cheese, grated
  • 100 g (3 ½ oz) butter or margarine
  • 25 g Dulse – very finely chopped.
  1. Mix all ingredients together to form a soft dough.
  2. Roll out onto a floured board to about 1½ cm / ½ inch thickness.
  3. Cut with biscuit shapers.
  4. Place on a greased baking trays and flatten slightly with a fork.
  5. Bake in a preheated oven at 200 C (400 F, Gas Mark 6) for about 10 mins, or until light brown.
  6. Transfer to a wire rack to cool.
  7. Store biscuits in an airtight container.
