While iceberg lettuce have a reputation of being low in nutrients, that’s not exactly true – Iceberg are just lower in nutrients than some other types of lettuce. Mainly because we discard the greenest leaves leaving just the pale heart. That said it is still a useful base for any salad being nice and crisp to shred as long as you don’t rely on it as your main source of leafy greens. We source ours locally during the summer months and have to rely on imported ones during the winter.

Description

Iceberg lettuce is one of the favourite green leafy vegetables used.  Iceberg lettuce has a mild flavour and firm, crunchy texture, making it a good choice for salads and sandwiches. When used in combination with other varieties of lettuce, iceberg lettuce will contribute a pleasant crunch to salads or a healthy addition to a sandwich.  When choosing a head of lettuce opt for one that looks fresh and not wilted and brown. Store in an airtight bag or covered container the refrigerator and it can last up to two weeks. Be sure to rinse the lettuce thoroughly before you use it. Let the leaves dry a bit or use a salad spinner to get rid of the excess water. And don’t chop your lettuce until you are ready to use it. The leaves oxidize quickly, and although the brownish edges won’t hurt you, they don’t look good.
